Anthocyanins - what is thatµ
These secondary plant compounds belong to the group of water-soluble plant pigments and are therefore mainly found in fruits, where they give them a red, purple or, in the case of blueberries, blue colour. They can also be found in cherries, blue grapes, acai berries, red cabbage and chokeberries, for example.
Anthocyanins also belong to the group of flavonoids, which in turn belong to the polyphenols.
Ingredients of blueberries
The blueberry (Vaccinium myrtillus) belongs botanically to the heather family and is completely blue in colour (skin and pulp).
Besides anthocyanins, the small, round fruits contain fruit acids, pectins, catechin tannins and other flavonoids. They also contain significant amounts of vitamins C and E, B vitamins, calcium, phosphorus and potassium.
