Red mold rice Monascus purpureus with 2,95 mg Monacolin K per tablet
Red mold rice is a fermentation product of ordinary white rice with the mold of the genus Monascus purpureus. The fermentation process produces red pigments as well as monacolins, of which Monacolin K is the best known. The main components of red mold rice are carbohydrates (25-73%), proteins (14-31%), water (2-7%) and fatty acids (1-5%).
In East Asia, red rice has been used for hundreds of years and is highly valued in traditional Chinese nutrition.
