Lecithin - a natural component of cell membranes
Lecithin is an important component of cell membranes and occurs naturally in the body. It belongs to the group of phospholipids. Phospholipids are composed of fatty acids, glycerol, phosphoric acid and choline. Lecithin is particularly abundant in the egg yolk and sperm cells of plants, especially where fats and fatty oils are found.
The term lecithin comes from the Greek and means egg yolk. Lecithin was first isolated from egg yolk in 1846. Today, the phospholipid is obtained almost exclusively from the oil of the soy plant, whose seeds contain about 2 % lecithin.
